Easy Vegan Almond Butter Banana Bread

I have tried a few vegan banana bread recipes in the past and although they all turn out delicious, I find them a little finicky and difficult to make. I also seem to have an issue with the texture as they don’t slice very well and turn out quite crumbly. Then I thought to myself that I should try a nut butter based banana bread because nut butters are so easy to bake with (also nut butter is life). There is a tonne of peanut butter banana bread recipes which I am keen to try but for this particular recipe I wasn’t looking for a distinct nutty flavour, I was just looking for a way to make an easy banana bread that tasted like plain and simple banana bread.

I found that my old go-to banana bread recipe was not something I really enjoyed baking any more because it required too many steps and had become too time-consuming. This banana bread recipe is very easy to make, it uses just a few simple ingredients and comes out with a moist texture that is also easy to slice (unless your baby tips the entire bag of walnuts in the batter like mine did).

I’ve made this recipe with plain almond butter and also once with ABC butter (almond Brazil nut cashew butter) both these nut butters are mild tasting so can be used as an egg and oil replacement without giving off much taste. To me, this banana bread tastes like a loaf of traditional banana bread but it’s so much easier to make! I’m also keen to try it with stronger tasting nut butters like peanut, hazelnut, and pecan for flavored banana bread but for now I’m simply happy to update my usual banana bread with this much easier version. I love making my banana bread with lots of different add in’s. My favorites have always been walnuts, pumpkin seeds, sunflower seeds, and dark chocolate chips.

I love adding almonds wherever I can because they’re one of the most beneficial nuts for hormone balance. They are high in plant-based protein and healthy fats as well as magnesium and vitamin E. They are a perfect addition to the diet for anyone coming off birth control (it will help you metabolize the progesterone that birth control has made you stop producing) as well as anyone suffering from low progesterone, like I was. Adding almonds into healthy desserts like this is even better because you’re also getting the added benefit of nutritious bananas and in my case the benefits of Cacao from the dark chocolate chips. Plus it can address hormonal sugar cravings in a much healthier wholesome way!

Easy Vegan Almond Butter Banana Bread

Hazel & Cacao:
Ingredients
  • 3 ripe bananas
  • 1½ cup wholemeal spelt flour
  • ½ cup coconut sugar
  • 1 tsp baking soda
  • pinch salt
  • ½ cup almond butter
  • ¼ cup almond milk
  • ADD-INS (OPTIONAL)
  • ⅓ cup chopped walnuts
  • ⅓ cup dark chocolate chips
  • ⅓ cup mixed sunflower and pumpkin seeds
Method
  1. Mash the bananas in a large bowl.
  2. Sift together the spelt flour, coconut sugar, baking soda and salt over the mashed bananas
  3. Add in the almond butter and almond milk and mix well to combine
  4. Mix through the add-ins if using (you can use anything you like)
  5. Pour batter into lightly greased loaf tin and decorate with flaked almonds
  6. Bake at 180 C for 30 - 40 mins or until a toothpick comes out clean
