Vegan Peanut Butter Chocolate Chip Cookies made with Almond Meal

Ingredients
  • 1 cup blanched almond meal
  • ⅛ tsp baking powder
  • pinch salt
  • ½ cup peanut butter ( crunchy or smooth does not matter)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 2 TBSP maple syrup
  • 2½ TBSP coconut oil
  • ¼ cup dark chocolate chips or cacao nibs
Method
  1. Add all your ingredients into one big bowl. I like to add the dry ingredients first and then add the coconut oil and maple syrup and peanut butter last.
  2. Mix well until a cookie dough is formed then fold in your chocolate chips.
  3. Create cookie shapes by rolling heaped TBSP amounts into a ball and then pressing them down with your fingers until they form a cookie shape
  4. Bake on a lightly greased or lined baking tray for 10 - 12 minutes at 170 C.
  5. Makes about 12 cookies in total
