Matcha Vanilla & Lime Upside Down Breakfast

Ingredients
  • BASE:
  • matcha favoured granola from The Unrefined or your favourite granola.
  • SOY YOGURT:
  • 1 packet organic silken tofu
  • 2 TBSP maple syrup
  • juice half lemon
  • drop vanilla extract
  • MATCHA SMOOTHIE:
  • ½ cup coconut water
  • 1 cup spinach
  • 1 frozen banana
  • flesh ½ avocado
  • juice of 1 lime
  • ½ tsp matcha green tea powder
  • 2 tsp maple syrup to sweeten
Method
  1. For the soy yogurt: Combine all ingredients into a blender and blend for a few seconds until smooth. Empty yogurt into a glass jar and set aside. Left overs can be stored in the fridge for a week.
  2. For the smoothie: Combine all smoothie ingredients in a blender and blend until smooth. Add more coconut water if you want a runnier consistency.
  3. To assemble: Place a few big tablespoons of granola at the base of your jar of choice, add your soy yogurt and top with the matcha smoothie. Enjoy!
