Macadamia Shortbread Cookies with Almond Meal

- 1 cup blanched almond meal
- ⅛ tsp baking powder
- pinch salt
- ⅓ cup macadamia butter
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- 2 TBSP maple syrup
- 2 TBSP coconut oil
- 12 or so macadamia nuts
- Combine all the ingredients except macadamia nuts in a bowl and mix to combine
- Roll cookie dough into balls about 1-2 TBSP in size and place on a lightly greased or lined baking tray
- Press 1 Macadamia nut into each cookie ball to flatten into a cookie shape. Adjust shape if needed.
- Bake for 12 -15 minutes at 180 C
- Allow to cool before serving. The cookies are very soft. Bake them a little longer if you prefer your cookies harder.
