Vegan Oat & Quinoa Pancakes

Ingredients
  • 2 cups pre cooked quinoa ( about 1 cup uncooked quinoa)
  • 2 cups rolled oats ( gluten free if necessary)
  • 1 TBSP baking powder
  • 2 tsp cinnamon
  • pinch salt
  • 1¾ cups almond milk
  • 2 TBSP maple syrup
  • 1 tsp vanilla extract
Method
  1. Process some rolled oats in your blender until they become a flour, or used ready made oat flour
  2. Add cooked quinoa, baking powder and salt to the blender. Do not process until wet ingredients are added
  3. In a small bowl mix together almond milk, vanilla and maple syrup.
  4. Add to the blender and blend until a thick batter forms
  5. Grease your pancake pan with a little bit of oil ( I used coconut oil spray)
  6. Add batter to pan. You can make your pancakes as big or small as you like. I poured directly from my blender in to my special pancake pan. The circles were quite small so they made pikelet looking pancakes. To get similar shaped pancakes I would suggest using no more than 2 TBSP of batter per pancake.
  7. Fry for a few seconds on one side until bubbles form, flip over and cook the other side for a few more minutes. The pancakes are a little mushy on the inside so make sure you do not try and flip them too early as they will fall apart.
  8. Continue
  9. Serve with strawberries and maple syrup or whatever you like
