Mandarin & Cardamon Muesli

Ingredients
  • 2½ cups oats
  • 2 medium mandarin ( peels only )
  • ½ cup almonds
  • ½ cup pecans
  • ½ cup hemp seeds
  • 1 TBSP cardamon
  • ½ cup coconut oil
  • 2 TBSP maple syrup
  • pinch salt
Method
  1. Peel mandarins and chop peel into small chunks
  2. Roughly chop almonds and pecans
  3. In a large bowl combine oats, mandarin peels, almonds, pecans and hemp seeds. Add pinch salt
  4. In a seperate bowl mix together (melted) coconut oil and maple syrup
  5. Pour oil mixture over oat mixture and mix until well coated
  6. Spread mixture evenly on baking tray
  7. Bake at 180C for 20 minutes, stirring occasionally
