Vegan Carrot Hot Dogs with Homemade Mustard and Ketchup

Ingredients
MUSTARD:
¼ cup Keen's mustard powder
⅓ cup water
¼ tsp ground turmeric
2 TBSP distilled white vinegar
KETCHUP:
½ cup tomato passata sauce
2 TBSP maple syrup
¼ cup white vinegar or apple cider vinegar
½ tsp onion powder
½ tsp garlic powder
1 tsp salt
Pinch celery salt
Pinch Keen's mustard powder
¼ tsp ground cloves
Good pinch black pepper
CARROT HOT DOGS
4 hot dog buns
4 skinny carrots
1 TBSP olive oil
2 TBSP liquid vegetable stock
⅛ cup apple cider vinegar
1 TBSP Tamari or soy sauce
½ tsp maple syrup
¼ tsp garlic powder
½ tsp smoked paprika
Pinch Keen's mustard powder
Method
FOR THE MUSTARD: mix all ingredients in a bowl until well combined. Microwave for 1 minute to thicken and allow flavour to develop. Set aside to thicken some more.
FOR THE KETCHUP: mix all the ingredients in a bowl until well combined and set aside.
FOR THE HOT DOGS: shape carrots so they are more rounded at the ends and hot dog looking.
Place carrots in oven safe dish and add all marinade ingredients to the dish. Mix until carrots are well coated and allow to sit for 30 minutes to marinate.
Place carrots to bake at 200 C for 30 minutes.
Prep hot dog beads, add baked carrots and too with ketchup and mustard and whatever other topping you like.
