Easy Vegan Almond Butter Banana Bread

- 3 ripe bananas
- 1½ cup wholemeal spelt flour
- ½ cup coconut sugar
- 1 tsp baking soda
- pinch salt
- ½ cup almond butter
- ¼ cup almond milk
- ADD-INS (OPTIONAL)
- ⅓ cup chopped walnuts
- ⅓ cup dark chocolate chips
- ⅓ cup mixed sunflower and pumpkin seeds
- Mash the bananas in a large bowl.
- Sift together the spelt flour, coconut sugar, baking soda and salt over the mashed bananas
- Add in the almond butter and almond milk and mix well to combine
- Mix through the add-ins if using (you can use anything you like)
- Pour batter into lightly greased loaf tin and decorate with flaked almonds
- Bake at 180 C for 30 - 40 mins or until a toothpick comes out clean
