Vegan Chocolate Chip Oatmeal Cookies
I think it’s interesting how my cooking has naturally gravitated to more kid friendly treats. I actually found a variation of this recipe that randomly popped up on my Facebook. It was quite a popular recipe and as soon as I saw it I knew the baby would love it! I also like making use of my baby purée s so since I always have applesauce around lately this recipe came together in minutes. Although I must admit I do wish that I had used sultanas instead of chocolate chips because I tried really hard not to let the baby have any chocolate until he turned one ( I failed), so every time I gave him a cookie I was picking out the chocolate! Was kind of annoying. Having said that there is no way I would prefer sultanas over chocolate chips so at least I was happy. I really should have just made two batches.
These cookies are very easy to make and are perfect breakfast cookies. Crunchy on the outside and soft and gooey on the inside. I actually crumbled mine up a couple of times and ate them with vegan yogurt and berries for breakfast, kind of like a granola replacement.
The cookies are gluten free provided you use gluten free oats , free from dairy and refined sugar and I think a pretty wholesome cookie that most kids (and adults ) would love! Enjoy !
