Ever since I married my husband, we have made our guacamole the same way, which is to mix it with sour cream. It’s absolutely delicious! Since becoming more plant-based I’ve looked for ways to imitate this with vegan sour cream alternatives but they just didn’t taste the same. I usually just resorted to having plain mashed avo along with my nachos etc but I always felt like I needed something extra so one day out of nowhere I just decided to blend up some cashews with my avocado and it was the best! I got the idea from an avocado raw cake I made. I remember thinking it tasted like guac when I was making it haha I’ve also seen similar versions of avocado and cashew creams online and they really are better than mixing with vegan sour cream alternatives, and for the most part, probably healthier too! Here is my super quick and easy vegan and gluten-free recipe that you can have on nachos or enchiladas or anything you want!

- 1 avocado
- ¼ cup raw cashews
- Juice of ½ lemon
- Pinch salt to taste
- Water if needed
- Simply blitz everything in a food processor or blender until creamy. I use my mini food processor
