Vegan Double Chocolate Almond Butter Banana Muffins

Ingredients
  • 3 ripe bananas
  • 1 cup wholemeal spelt flour
  • ½ cup cacao powder
  • ¾ cup coconut sugar
  • 1 tsp baking soda
  • pinch salt
  • ½ cup almond butter
  • ¼ cup almond milk
  • ⅔ cups dark chocolate chips
Method
  1. Mash the bananas in a large bowl.
  2. Sift together the spelt flour, coconut sugar, baking soda and salt over the mashed bananas
  3. Add in the almond butter and almond milk and mix well to combine
  4. Mix through the chocolate chips
  5. Pour batter into lightly greased or lined muffin tin and decorate with extra choc chips
  6. Bake at 180 C for 20-30 mins or until a toothpick comes out clean
