Raw Vegan Coconut Pomegranate Slice

Ingredients
  • BASE:
  • 1 cup almonds
  • ¼ cup hemp seeds
  • ¼ cup pumpkin seeds
  • 1½ cup dates
  • 1 TBSP coconut oil
  • FILLING:
  • 3 cups raw cashews (soaked for 4 hours or overnight)
  • 1 can coconut cream
  • ⅓ cup maple syrup
  • juice 1 lemon
  • 1 tsp vanilla extract
  • TOPPING:
  • pomegranate seeds
Method
  1. For the base, break down the almonds in a food processor until they form a crumb, add all the remaining base ingredients and process again until sticky and crumbly.
  2. Press down evenly on to a lined square or rectangular tin. I used a sheet pan for this recipe. Set aside
  3. For the filling: add all the filling ingredients to a high-speed blender and blend until smooth and creamy. Pour over base and smooth out with spatula. Sprinkle with pomegranate seeds. If the seeds sink in the fllling, you can place the slice in the fridge until it hardens slightly but is not fully set, then sprinkle on the pomegranate seeds
  4. Place in the freezer for 3-4 hours until set (or overnight)
  5. Allow to thaw, slice and enjoy
