Healthy Vegan Chocolate Mud Cake

Ingredients
  • 1¼ cup blanched almond meal
  • ¾ cup wholemeal spelt flour (or sub any gluten-free flour of choice)
  • ⅔ cup cacao powder
  • 2 tsp baking powder
  • ¼ cup warm water
  • ¼ cup avocado oil
  • 1 cup maple syrup
  • 2 tsp vanilla extract
  • CHOCOLATE ICING:
  • 2 TBSP avocado oil
  • 2 TBSP cacao powder
  • 2 TBSP maple syrup
Method
  1. In a large bowl mix the almond meal, flour, cacao powder and baking powder.
  2. In a separate bowl mix the water, avocado oil, maple syrup and vanilla.
  3. Pour the liquid mixture over the dry and mix to combine.
  4. Pour batter into a greased 20 cm springform cake tin and bake for about 45 minutes at 180 C or until a toothpick comes out clean.
  5. Remove from oven and allow to cool before icing.
  6. Mix the icing ingredients in a small bowl and pour over cake, smooth with a spatula. Pop in the fridge for an hour to harden.
  7. Decorate with blueberries or toppings of choice slice and enjoy
