Two Vegan Pattie Recipes: Lentil and Brown Rice & White Bean & Millet

Ingredients
  • Lentil Brown Rice Patties:
  • ½ cup dry brown lentils
  • 1 cup precooked brown rice
  • 1 small onion
  • 1 zucchini
  • 1 carrot
  • ½ cup bread crumbs ( use gluten-free if necessary) plus extra for rolling
  • salt and pepper to taste
  • 2 tsp of mixed Italian herbs or herbs of choice
  • oil of choice for brushing (optional)
  • WHITE BEAN MILLET PATTIES
  • 1 400g can cannellini beans
  • ½ cup precooked millet
  • ½ cup pre-cooked quinoa
  • 1 small onion
  • 1 zucchini
  • 1 carrot
  • ½ cup bread crumbs ( use gluten-free if necessary) plus extra for rolling
  • salt and pepper to taste
  • 2 tsp of mixed Italian herbs or herbs of choice
  • oil of choice for brushing (optional)
Method
  1. FOR BROWN RICE LENTIL PATTIES
  2. Cook lentils according to package directions in water with a little dry veggie stock
  3. Finely chop your onion and trim and grate your carrot and zucchini. I use a food processor with grater attachment for this.
  4. Fry off your onion in a little sunflower oil until lightly browned then add your grated carrot and zucchini and cook for 5 - 10 minutes on medium heat until the veggies have softened. You can add a TBSP of water to help.
  5. In a large bowl combine your cooked brown rice, cooked lentils, cooked veggie mixture, bread crumbs and mixed seasoning.
  6. Season with lots of salt and pepper
  7. Mix well until well combined and start to form your patties. I form large balls and then flatten them slightly in between my palms. You can make them any size you want but I would keep them small to medium and the larger ones do not hold together as well.
  8. Coat in extra bread crumbs on each side
  9. Place your patties in a baking tray greased with a little oil. Brush each patty with a little oil of choice or alternatively use an oil spray
  10. Bake at 200 C for about 20 - 30 minutes
  11. You can also fry your patties for about 30 seconds on each side in a little oil, they soak up lots more oil this way but both versions are delicious
  12. FOR WHITE BEAN PATTIES:
  13. Rinse and drain white beans, transfer to a bowl and crush with a potato masher until as smooth as possible. Combine with the pre-cooked quinoa and millet and mix. Follow the remaining steps from the brown rice lentil patties.
  14. I usually make both patties at once and just double the vegetable mixture and then divide it evenly.
