Using a grater attachment, grate the beetroot into the food processor. Remove grater attachment and all remaining ingredients into the food processor and blitz until smooth.
Transfer mixture into a lined square baking tin. Sprinkle with some dark chocolate chips or toppings of choice (coconut helps the red colour stand out more)
Bake in the oven at 180 C for about 30 -40 minutes or until a toothpick comes out clean.
