Pinto Bean Quinoa Burger Patties

Ingredients
  • 1 cup pre-cooked quinoa (i used tri-coloured quinoa)
  • 1 x 400g can pinto beans or beans of choice (drains and rinsed)
  • ¼ cup tomato paste
  • 1 TBSP mixed Italian herbs
  • salt and pepper to taste.
Method
  1. In a large bowl, mash the beans with a potato masher until mostly mashed. It's ok if you have some beans still intact.
  2. Add the quinoa, tomato paste, herbs and salt and pepper. Mix well to combine.
  3. Use ¼ cup measurements and shape them into burger patties with hands.
  4. Place on a baking tray and bake for 12-15 minutes at 200 C. Burger patties can also be grilled.
