Time for my first flaxseed recipe for my flaxseed Time for my first flaxseed recipe for my flaxseed series. This is a very easy 3 ingredient flax banana bars. 

This is my first time baking with flax only (not just a flax egg) for some reason I assumed that since the omega 3s in flax oxidise so quickly when ground and exposed to air that heating flax would be even worse, but actually that’s not true! Cooking flax seeds does not significantly alter nutrition and in fact it may make them even better because flax does have a small amount of cyanide which theoretically could cause toxicity (although this is not quite proven in the research but it is a thing that has been circulating around the internet) cooking flax completely destroys the cyanide, (especially when combined with liquid )while still retaining nutrition and hormone balancing effects.

Starting my new series today all about flax seeds Starting my new series today all about flax seeds and women’s hormones. Both this series and my previous series are under a larger umbrella of things that impact estrogen. Like soy, flax seeds are very rich in phytoestrogens, they have a different phytoestrogen to soy called lignan but they seem to work in similar ways in the body. Lignans have actually been found to be more powerful than isoflavones in soy especially for things like cyclical breast pain and breast cancer prevention. Flax seeds also have the benefit of being very high in fibre which is wonderful for clearing out excess estrogen from the gut.

Last recipe for my soy series. Probably could have Last recipe for my soy series. Probably could have shared this one in my caffeine series too. It’s an old recipe but a popular one. I wanted to take a moment to talk about soy milk as I’ve been surprised that people seem to fear soy milk the most, even over tofu ? At least I’m basing that on the DMs I’ve received. I’m not sure why, soy milk is the lowest in phytoestrogens even when using whole soy beans (which I recommend as it’s less processed and more nutritious) a lot of soy milks on the market use soy protein isolate which actually have close to zero phytoestrogens in them… personally of all the plant milks on the market I think soy is the most nutritious, it has a whopping 7g of protein which is very similar to dairy milk which has around 8g, almond and oat milk varieties have less that 2g of protein and have a much higher water content so are less nutritious. Soy milk is also naturally higher in calcium even when not fortified. That does not mean I don’t drink any other milk besides soy, I actually enjoy a huge variety of plant milks and pick and choose depending on the meal or dessert I’m making, but from a nutritional stand point soy is definitely superior and is an easy way to boost the protein content of breakfast. 

BASE:
1 cup pecans
6 dates
¼ tsp decaf instant coffee
1 tsp vanilla
FILLING:
1¾ cup cashews
¼ tsp decaf instant coffee
1 cup of soy milk
⅓ cup maple syrup
⅓ cup melted cacao butter or coconut oil
1 tsp vanilla
pinch of sea salt
cacao powder for dusting
coffee beans for decorating
Method
To make the crust, Add pecans to the food processor and process until ground. Add the rest of the crust ingredients and process again.
Divide the base between small jars and press with fingers to cover the bottom
For the filling, combine all of the ingredients in a high-speed blender and blend until smooth.
Pour filling on top of the crust for each jar. Dust with cacao powder and add coffee beans.
Refrigerate for 6 hours or overnight.

I have two recipe shares left for my soy series be I have two recipe shares left for my soy series before I move on to my flax seeds series ( which actually have a much stronger impact on estrogen than soy) this vegan Black Forest baked cheesecake is actually pretty much the same recipe as my baked blueberry cheesecake I shared a few posts ago. When I first developed the vegan baked cheesecake I decided to try it in all the different flavours because I was on to a good thing ! Enjoy 

CRUST
1 cup cacao powder 
3 cups blanched almond meal
4 TBSP avocado oil or other neutral oil
pinch salt
4 TBSP maple syrup
FILLING:
1 cup frozen pitted cherries 
1 cup cashews (soaked for 3-4 hours)
1 300g packet organic silken tofu
6 TBSP maple syrup
1 TBSP nutritional yeast
1 TBSP vanilla extract
1 Tsp tahini
Method
For the base: mix all the crust ingredients in a bowl with a spoon until slightly sticky and moist.
Press the mixture evenly on the base and sides of a lightly greased cake tin. Try to go as high up the sides as you can.
For the filling: add the cherries on top of the base.
Add all the remaining ingredients in a blender and blend until smooth
Pour over base and blueberries and bake at 180 C for about 30- 40 minutes. I kept checking and shaking the tin and removed once the filling had set and had a jelly-like consistency (no longer liquid)
Remove from oven and allow to cool

1. Multiple studies have shown soy to be protectiv 1. Multiple studies have shown soy to be protective against breast cancer and may actually help improve breast cancer survival rate. You can read the soy article on my blog to look at some of the big studies that go into this. Also since my soy series I have received numerous DM's with women convinced that drinking soy milk has messed up their hormones. I just want to say that soy milk is very low in phytoestrogens, it only has about 6 mg and you need at least 22mg to start noticing some sort of effect (although personally I have never really noticed anything myself either good or bad) If your soy milk uses soy protein isolate instead of whole soybeans then it has even less than 6mg.

2. It is true that a very large percentage of soy grown is GMO however in most countries GMO soy is reserved for animal feed and not human consumption. It may be possible that some GMO soy makes it into highly processed foods (read ingredients) but almost across the board things like tofu, edamame, tempeh etc are non GMO.

3. Soy foods do not cause thyroid problems. A review of more than 400 studies published in a 2021 Critical Reviews in Food Science and Nutrition, found that isoflavone intake does not adversely affect thyroid function. There may be an interaction between soy intake and thyroid medication absorbability but most side effects were due to soy isoflavone supplements, not food-based soy.

4. Soy grown for human consumption is very small (less than 1% of total soybean production) compared to what is grown for animal feed. As it pertains to human consumption, soy is one of the most sustainable protein sources. 

5. According to a meta-analysis of 41 clinical studies (Reproductive Toxicology, 2021) on the feminizing effects of soy, no significant effects of soy protein or isoflavone intake were found, regardless of dose or study duration. Fears are based on rat studies that do not translate to humans and 1 or 2 case studies where one man at something like 14 serves of soy a day and not much else.

One of my most popular desserts ever, baked vegan blueberry lemon cheesecake actually uses tofu! Love tofu in desserts. 

CRUST
1 cup quinoa flakes
3 cups blanched almond meal
4 TBSP avocado oil or other neutral oil
pinch salt
4 TBSP maple syrup
FILLING:
1 punnet blueberries
1 cup cashews (soaked for 3-4 hours)
1 300g packet organic silken tofu
6 TBSP maple syrup
1 TBSP lemon zest
1 TBSP nutritional yeast
1 TBSP vanilla extract
1 Tsp tahini
Method
For the base: mix all the crust ingredients in a bowl with a spoon until slightly sticky and moist.
Press the mixture evenly on the base and sides of a lightly greased cake tin. Try to go as high up the sides as you can.
For the filling: add the blueberries on top of the base.
Add all the remaining ingredients in a blender and blend until smooth
Pour over base and blueberries and bake at 180 C for about 30- 40 minutes. I kept checking and shaking the tin and removed once the filling had set and had a jelly-like consistency (no longer liquid)
Remove from oven and allow to cool
Decorate with blueberries

Choc peanut butter chia mousse pudding ? Don’t even know what to call it?  Good for breakfast or healthy dessert. 

CHOCOLATE PEANUT BUTTER MOUSSE
½ banana
1 ripe avocado
2 TBSP maple syrup
2 TBSP cacao powder
1 TBSP peanut butter
pinch salt
drop vanilla extract
CHIA PUDDING:
1 300g packet silken tofu
juice half lemon
2 TBSP maple syrup
drop vanilla
⅓ cup chia seeds
TOPPINGS AND LAYERS
sliced banana
dark chocolate chips
chocolate granola
extra peanut butter
Method
Begin by smearing some runny peanut butter on to the insides of glass jars of choice. I just used a teaspoon to do this,
For the mousse: add all ingredients into a food processor and blend until smooth. If you do not have a food processor you can mash the avocado and banana with a fork and mix everything together in a bowl. This will work but it will turn out more clumpy and you may see little clumps of avocado in your mousse.
Layer into the bottom of smeared glasses, top with some banana slices (use the other half of the banana) and other toppings if you wish and set aside.
For the chia pudding: Blend all ingredients except chia seeds in a blender (I like to use a mini blender like the Nutri Ninja to save on clean up) mix in chia seeds well with a spoon and layer on top of the mousse layer. There is no need to allow the chia seeds to sit as the pudding will be thick enough to layer.
Top with more banana, granola, choc chips, and peanut butter and any other toppings you wish!

I think it’s quite interesting that soy is so feared (still) but flax seeds which are also high in a different type of phytoestrogen seem to be widely accepted as beneficial for estrogen, the reason this surprises me is that flax seeds are actually a lot stronger than soy in terms of affecting estrogen , but soy is the one that is feared 🤷‍♀️ my next series is all about flax seeds. 

I do think it’s true that western populations have less of the microbes necessary to breakdown soy compared to Asian populations (this is where the s equol conversation comes in, have any of you heard of that?) but I don’t think that the assumption should then be westerners can’t benefit from soy… the gut microbiome can adjust in time with the careful slow introduction of soy, or any other food for that matter. One of my most favourite ways to consume soy is roasted edamame beans, they add a great salty crunch to a salad. I am yet to master boiled edamame, I can’t quite get it the same as the one I eat at restaurants, not sure why? This bowl probably doesn’t make much sense but is the result of throwing together whatever you have in the fridge and making it balanced, also anything works with potato because potato makes everything taste good,

I love cycle-syncing soy foods in my follicular and ovulatory phases, in fact I crave soy in those phases. The phytoestrogens help to balance rising estrogen and provide great quality protein too.

My favourite way to eat tofu is with chocolate! Cant beat it. I feel like so many of my recent recipes have the chocolate silken tofu combo …. I really do use it a lot because it’s so good! 
Vegan Choc hazelnut custard tarts: save for later. 

BASE:
1½ cup lightly roasted hazelnuts
1 cup pitted dates
1 TBSP maple syrup
2 TBSP cacao powder
1 TBSP water 
FILLING:
1 x 300g packet organic silken tofu
½ cup chocolate hazelnut spread of choice or use homemade 
2 TBSP maple syrup
drop vanilla extract
pinch salt
Method
For the base: process all the ingredients in a food processor until sticky. If it too crumbly add more liquid
Press evenly into the side and base of 6 mini tart tins and set aside
For the filling, add all the ingredients in a high-speed blender and blend until smooth and creamy.
Pour filling evenly over tart bases and decorate with berries and chopped hazelnuts

Soy foods and flax seeds are the most concentrated in phytoestrogens and so have been most studied for how they affect hormones, I’ll be doing lots of content on flax too but starting with soy. 

I wrote this blog post 2 years ago but have gone through and updated it with some more current research (ok I pretty much re wrote it). Everyone seems to have an opinion on soy and hormones, if your confused about why there are so many opinions I encourage you to read the introduction to this article because it talks about reading and interpreting science properly. I’ve also written this article attempting to cover the most common concerns I’ve noticed and some info for the women that really do react to soy and don’t understand why.

I was looking through my recipes trying to see if I was looking through my recipes trying to see if I had any more coffee recipes to finish of my caffeine for womens hormones series and I completely forgot about the coconut mocha slice. It’s a very old recipe but a good one. Tomorrow I’ll be starting my soy for hormones series, I asked you to vote between soy and alcohol in my stories and soy won. I’m doing content relating to estrogen right now. 
Here is the recipe : save for later

BASE:
¾ cup hazelnuts
1 heaped TBSP almond butter
8 dates
2 TBSP cacao powder
pinch sea salt
MOCHA/COCONUT LAYERS:
2 cups raw cashews (soaked in water for at least 4 hours)
1 teaspoon vanilla extract
⅓ cup maple syrup
⅓ cup melted coconut oil
About 3 tsp of instant organic naturally decaffeinated coffee dissolved in ⅓ cup hot water ( you can use regular instant coffee if you don't mind caffeine) Add more coffee granules if you want a stronger taste
1 small tub coconut yogurt - or enough to create an even top layer
cacao powder for dusting
Method
For the base: combine all your ingredients in a food processor and blitz until well combined and sticky.
Press firmly into the base of a square baking dish lined with baking paper.
Set in the fridge while you make your mocha coconut layers
For Mocha/Coconut Layers: combine cashews, vanilla, coconut oil and maple syrup in a blender and blend until smooth and creamy.
Pour half your cashew mixture over your base
Add the instant coffee to the remaining half of the cashew mixture in your blender and blend until smooth
Pour over previous layer and spread evenly.
Spread enough coconut yogurt over the top of the slice to form your last layer
Set in the freezer for about 4 hours until set.
Allow to defrost for a few minutes, dust with cacao powder and cut into slices to serve.
** if you can try and leave 15 minutes of setting time in the freezer in between each layer to avoid layers blending together.

Sharing some graphics that will hopefully break do Sharing some graphics that will hopefully break down the amount or caffeine in different drinks and foods, please just take these as a rough guide, the amounts are not 100% precise and I’m also not great at maths but I’ve done my best. 

Let’s also remember that not all caffeine is created equal , thinks like matcha and chocolate have other compounds like l theanine and magnesium that help curb some of the effects of the caffeine and make it more slow release which is much easier for the body to deal with, but personally I still think it’s good to be mindful of total caffeine consumption as some womens hormones are still sensitive even to things like matcha.  400 mg is considered safe for men but for women 100-200mg seems to be safer. 

Also honestly I don’t see any benefit to energy drinks… coffee at least has some amazing health benefits even if the caffeine is high… energy drinks have no health benefits and a lot more negative side effects.

Did you catch my reel for these vegan carrot cake muffins ? Dolloped with some vanilla @coyo_organic coconut yogurt because it’s healthy and I’m absolutely terrible with frosting. I have a mental barrier with frosting, I’ve actually considered taking a class to help me overcome it 😂 hope you all have a wonderful Easter! Spend good quality time with loved ones and eat lots of chocolate. 

Also let’s appreciate that carrots have soluble fibre that helps clear out excess estrogen in the gut and helps with pms 💛

2¼ cups wholemeal spelt flour
3 teaspoons baking powder
1 teaspoon baking soda
3 teaspoons cinnamon
½ teaspoon allspice
Pinch salt
½ cup unsweetened applesauce
1 cup almond milk
2 teaspoons vanilla extract
1 cup coconut sugar
½ cup avocado oil 
2 cups grated carrots, medium-packed
FROSTING:
Vegan coconut yogurt and chopped walnuts.
Method
Preheat the oven to 180 C and line muffin tray. 
In a large bowl, sift together the flour, coconut sugar, baking powder, baking soda, cinnamon, allspice and salt.
In a separate bowl, whisk together the applesauce, almond milk, vanilla and oil.
Mix the dry ingredients into the bowl with the wet ingredients.
Fold in the carrots and stir until just combined.
Bake for 20-30 minutes or until a toothpick comes out clean.
Once cooled dollop and spread some coconut yogurt and sprinkle with chopped walnuts.

I had lots of fun writing this article and learning more about caffeine and coffee myself. I personally don’t drink any coffee, caffeinated tea or any other caffeine drinks, I still get a little bit from dark chocolate but not very much and as you will discover, not all caffeine is created equal. I’m actually now experimenting with an amazing decaf from @foodfarmacyau but I’m still not a huge fan of the taste of coffee unless it’s in desserts! Coffee flavoured desserts are my favourite! You can expect some coffee dessert recipes coming at you this week 💛

Second last follicular phase friendly recipe befor Second last follicular phase friendly recipe before I move on to my caffeine series next week 🙌 this one is just a little teaser of my upcoming ebook, vegan creamy mushroom and asparagus pasta. I actually developed this recipe for a client who never ended up using it so lucky I get to put it to use in my new ebook. 

I still like lean on mushrooms in the follicular phase,  especially early on before estrogen kicks in properly because of the way they can support neurotransmitters due to their unique amino acid profile. When my estrogen was low, the 3 days just after my period were the worst for me, I would get intrusive thoughts and anxiety every single month like clockwork and as soon as my estrogen kicked in they would start to die down. I hated this time of the month more than pms (which I also had). For me it was a serotonin issue which corrected itself once I raised my estrogen. I genuinely used to hate my follicular phase and couldn’t understand how women felt their best during this time. I don’t have this anymore at all, and thankfully I now also love my follicular phase ! But I don’t think post menstrual syndrome is talked about enough ! I’ve spoken to lots of girls that have told me they also experience this with no idea as to what’s going on. Have you ever experienced this ?

Happy Saturday! Nothing fancy in my caption tonigh Happy Saturday! Nothing fancy in my caption tonight just sharing a simple easy recipe using fertility boosting pomegranate (which I don’t eat enough of) pumpkin seeds and hemp seeds which are very high in plant based zinc to help support healthy follicle development and estrogen/progesterone production. save for later. 

BASE:
1 cup almonds
¼ cup hemp seeds
¼ cup pumpkin seeds
1½ cup dates
1 TBSP water
FILLING:
3 cups raw cashews (soaked for 4 hours or overnight)
1 can coconut cream
⅓ cup maple syrup
juice 1 lemon
1 tsp vanilla extract
TOPPING:
pomegranate seeds
Method
For the base, break down the almonds in a food processor until they form a crumb, add all the remaining base ingredients and process again until sticky and crumbly.
Press down evenly on to a lined square or rectangular tin. I used a sheet pan for this recipe. Set aside
For the filling: add all the filling ingredients to a high-speed blender and blend until smooth and creamy. Pour over base and smooth out with spatula. Sprinkle with pomegranate seeds. If the seeds sink in the fllling, you can place the slice in the fridge until it hardens slightly but is not fully set, then sprinkle on the pomegranate seeds
Place in the freezer for 3-4 hours until set (or overnight)
Allow to thaw, slice and enjoy

Sharing another easy follicular phase recipe tonig Sharing another easy follicular phase recipe tonight using silken tofu, cashews and peaches or nectarines to assist in estrogen balance. I placed this one on my blog recently along with a bunch of other recipes I had forgotten to upload. This works well as a healthy dressert or as a high protein yogurt alternative for yogurt bowls in the mornings. You can even add a probiotic capsule to it if you like. You can also sub the tofu for plant-based yogurt if you prefer. 

1 x 300g organic silken tofu
2 TBSP maple syrup
⅓ cup raw cashews
1 tsp vanilla extract
2 nectarines (stone removed)
juice ½ lemon (optional)
Method
Cut nectarines in half and remove the stone.
Simply add all the ingredients into a blender and blend until smooth. Lemon is optional for a more tart flavour. If you prefer sweet you can leave it out.
Serve with extra fruit, nuts and seeds or granola.
