Two Vegan Pattie Recipes: Lentil and Brown Rice & White Bean & Millet

We absolutely love vegan patties in this household. I have always loved them, but we have been eating them even more ever since we had a child. Our toddler absolutely loves them and I love giving them to him because its a really nice way to get a good mix of whole grains, legumes and vegetables in a nice little package. I always have a HUGE batch in my freezer that I pull out to have with various meals (usually potatoes) but I also love having them in the freezer for days when my toddler doesn’t like to eat the food we are eating. I know I can just quickly defrost some patties for him, I’ll serve with a few other bits and pieces that he likes and I know that he’s getting something nutritious that he absolutely loves. Despite all us being obsessed with patties, I really don’t like making them. I find that the process takes FOREVER. I actually get my poor mum to make me big batches sometimes because I hate making them so much. The main reason I dislike the process is that there are too many things to boil all at once, and I also hate rolling and shaping the patties especially when I am making a very large batch to freeze. That is something my old career as a dental hygienist taught me about myself: I dislike repetitive, tedious tasks ( like shaping patties). One of the things I have learned to do to speed up the process is to batch cook and freeze my whole grains ahead of time. I do this not only for these patties but for pretty much any meal that calls for whole grains. Grains freeze and defrost very well and it makes every day cooking much quicker, easier and more nutritious. It has been a game-changer. This is one of the reasons I switched to all glass containers a couple of years back because I can easily batch cook grains and pop them out of the freezer and quickly defrost them in the microwave without being worried about chemicals leaking from plastic.

You can find their full range of glass containers here: https://wiltshire.com.au/collections/storage  In order to make these patties quick and enjoyable to make, I highly recommend batch freezing some wholegrains before attempting the recipe. The recipe calls for pre-cooked grains. If you like to cook your own legumes, you can also batch cook your beans and lentils and freeze them and then just measure out what you need for the recipe, it will cut the recipe time by more than half.

The recipes are pretty straight forward although I do find that the texture can change a bit depending on how grains and legumes are cooked. I simply just add more breadcrumbs (use gluten-free if you need to) if the mixture is too sloppy and wet, or if the mixture is too dry I make sure I use wet hands to shape the patties. Sometimes I even add some water in, but this usually isn’t necessary.  You can make the patties as big or small as you like, although I tend to make them more on the small/medium side because the bigger ones don’t hold together as well. We keep our patties fairly plain but you could easily change up the flavours by adding different spices and herbs. We just stick to a good sprinkle of Italian herbs in ours. We use these patties as a side to other meals, usually some form of potato dish or with a salad. I don’t think they would work well in burgers as they don’t really taste like burger patties to me. I have tried in the past and it just didn’t work, I think because they have lots of breadcrumbs in them so putting them in a burger makes it taste like your eating bread on bread. For this recipe, I have demonstrated and added measurements for just one batch of patties. I usually make a huge quantity, maybe 6-8 x the amount and freeze the patties and enjoy them with different meals.

Ingredients
  • Lentil Brown Rice Patties:
  • ½ cup dry brown lentils
  • 1 cup precooked brown rice
  • 1 small onion
  • 1 zucchini
  • 1 carrot
  • ½ cup bread crumbs ( use gluten-free if necessary) plus extra for rolling
  • salt and pepper to taste
  • 2 tsp of mixed Italian herbs or herbs of choice
  • oil of choice for brushing (optional)
  • WHITE BEAN MILLET PATTIES
  • 1 400g can cannellini beans
  • ½ cup precooked millet
  • ½ cup pre-cooked quinoa
  • 1 small onion
  • 1 zucchini
  • 1 carrot
  • ½ cup bread crumbs ( use gluten-free if necessary) plus extra for rolling
  • salt and pepper to taste
  • 2 tsp of mixed Italian herbs or herbs of choice
  • oil of choice for brushing (optional)
Method
  1. FOR BROWN RICE LENTIL PATTIES
  2. Cook lentils according to package directions in water with a little dry veggie stock
  3. Finely chop your onion and trim and grate your carrot and zucchini. I use a food processor with grater attachment for this.
  4. Fry off your onion in a little sunflower oil until lightly browned then add your grated carrot and zucchini and cook for 5 - 10 minutes on medium heat until the veggies have softened. You can add a TBSP of water to help.
  5. In a large bowl combine your cooked brown rice, cooked lentils, cooked veggie mixture, bread crumbs and mixed seasoning.
  6. Season with lots of salt and pepper
  7. Mix well until well combined and start to form your patties. I form large balls and then flatten them slightly in between my palms. You can make them any size you want but I would keep them small to medium and the larger ones do not hold together as well.
  8. Coat in extra bread crumbs on each side
  9. Place your patties in a baking tray greased with a little oil. Brush each patty with a little oil of choice or alternatively use an oil spray
  10. Bake at 200 C for about 20 - 30 minutes
  11. You can also fry your patties for about 30 seconds on each side in a little oil, they soak up lots more oil this way but both versions are delicious
  12. FOR WHITE BEAN PATTIES:
  13. Rinse and drain white beans, transfer to a bowl and crush with a potato masher until as smooth as possible. Combine with the pre-cooked quinoa and millet and mix. Follow the remaining steps from the brown rice lentil patties.
  14. I usually make both patties at once and just double the vegetable mixture and then divide it evenly.
