Vegan Adzuki Bean Chocolate & Walnut Brownies

This is actually the third time I have attempted to make bean brownies. I have seen so many vegan recipes and videos and they all look so simple but mine have never turned out ( until now of course). The taste was always good but they always fail to rise at all and just stay one big gooey mess. I was convinced it was because it was missing eggs. Although it is easy to find egg replacements that help bind mixtures together, I find it difficult to get the same rise in baking with out eggs. But as always I do approach my baking with a fairly large degree of stress so I am probably not the most reliable source for anything baking related.

I refused to give up on these brownies because I can not think of a more excellent way to get beans into your diet than through chocolate! I used adzuki beans instead of black beans because I like them better, but black beans would work just as well. Sometimes black beans kind of grose me out. They are just too black! it looks un natural, I don’t like looking at them in burritos when they look all slimy, even though the taste is fine. Adzuki beans look a lot more appetising to me and they are quite high in lots of beneficial minerals as well as fibre and protein. They are a smaller reddish dark brown bean with a mild flavour. They are not always easy to find in Australia, at least not where I live, so you can imagine my excitement when I finally stumbled across some in my health food store. I stocked up on a fair few cans. Sadly lots of them did end up being wasted on failed adzuki bean brownie experiments.

I really like eating these brownies with my vegan vanilla custard and strawberries. I remember Maddy saying that he thinks the dessert has more protein than beef! And you know what, he is probably right. I actually find that following a plant based diet a lot of my protein comes from the desserts that I eat. I think it’s great since I eat my dessert without feeling guilty or worried about what any of the refined sugars or refined carbohydrates are doing to my system. They leave you feeling light and nourished instead of heavy and lethargic. Hope you enjoy the recipe!

Vegan Adzuki Bean Chocolate & Walnut Brownies

Recipe type: Dessert
Hazel & Cacao:
Ingredients
  • 1 can adzuki beans
  • 2 ripe bananas
  • 3 TBSP coconut oil
  • ¾ cup cacao powder
  • pinch salt
  • 1 tsp vanilla extract
  • ⅓ cup coconut sugar
  • 1½ tsp baking powder
  • ½ cup rolled oats ( used gluten free if necessary)
  • ½ cup dark chocolate chips
  • ⅓ cup chopped walnuts
  • Pomegranate seeds to decorate ( optional)
Method
  1. Place all of the ingredients except the chocolate chips and walnuts into a food processor
  2. Blitz together until a smooth batter is formed
  3. Fold in chocolate chips and chopped walnuts with spatula - do not pulse again
  4. Transfer mixture in to a lined square brownie tin of your choice
  5. Bake at 180 C for 20 - 30 minutes, or until a tooth pick comes out clean. You may need to experiment a little with the baking time as each oven is different. The brownies are quite moist at first but firm up a fair bit when cooled.
  6. Allow to cool and cut into brownie squares. Decorate with pomegranate seeds or with whatever toppings you like

    This recipe looks great, but can you give some weight/measure for ‘ 1 can’ of adzuki beans? Is it 200 grams? 400 grams? 1 cup? It’s a bit hard to guess…

    I used 130 grams of cooked adzuki beans and the recipe turned out beautifully. I baked the brownie in muffin cups for about 25 minutes.

      thanks so much! I used a bit more than that… but your version might be even better! I love how forgiving healthy desserts are
