I am not a pancake pro but I love pancakes. I wanted to experiment with different pancake recipes since I usually just stick to my full proof buckwheat pancake/waffle recipe which you can find here https://talidavoinea.au/vegan-banana-buckwheat-pancake-and-waffle-recipe/ I decided I really wanted to try a spelt flour pancake since I assumed it would have a fluffier texture more like the original. Honestly this recipe turned out so good I felt like I was eating at Max Brenner for breakfast. For the few people that may not know, Max Brenner is a chocolate restaurant with the most decadent desserts and treats, all extremely unhealthy and full of sugar of course but every once in a while it is worth it for the experience. I must admit I have never once gone there without feeling sick afterwards and I don’t go there very often anymore but I used to love going there back when I used to live in Melbourne. I was a student back then and could not afford much on the menu, so I would get the $2 chocolate lick and a full bottle of water to try and water down the sick feeling.

These pancakes taste like something from the Max Brenner menu, so much so that I was eating them waiting for the sick feeling to hit me, but it didn’t, not at all. I assume because the pancakes are actually super healthy, with no refined sugar, no dairy, no refined flour and no eggs. These are definitely something worth saving for a special treat and probably not something I would eat all the time, but if you really feel like something very decadent and indulgent these pancakes are your answer! enjoy!

Vegan Chocolate Wholemeal Spelt Pancakes with Peanut Butter Drizzle

Serves: 8-10
Ingredients
  • PANCAKES:
  • 1 cup oats
  • 1 cup almond milk
  • ⅓ cup wholemeal spelt flour
  • 2 bananas
  • 2 TBSP cacao powder
  • 2 tsp baking powder
  • pinch salt
  • PEANUT BUTTER DRIZZLE:
  • ½ cup maple syrup
  • ¼ cup peanut butter ( I used crunchy but smooth would work better)
  • ½ tsp vanilla extract
Method
  1. For the pancakes: Combine all the pancake ingredients in a blender and blend until smooth and thick
  2. lightly grease a small fry pan with coconut oil
  3. use ¼ cup measurement of batter to cook up your pancakes on medium heat for a few good seconds on each side or until bubbles start to form. I like to do my pancakes one at a time but fry them up however you like
  4. For the peanut butter drizzle: Mix all ingredients together in a bowl until well combined
  5. Drizzle over your pancake stack
  6. Serve with strawberries or anything else you like
